HOTMIXPRO MASTER BREEZE is a unique and innovative machine that combines cold technology with its basic function as a mixer for emulsifying liquids, or as a cutter for processing any solid ingredient. Master Breeze also has the depressurization system thus combining the advantages of cold and vacuum at the same time. Using cold and the absence of oxygen for chopping, emulsifying or stirring guarantees unexpected results, since low temperatures and the absence of pressure do not allow alterations in the color of the chopped products. The operator will thus be able to manage his preparations inside the refrigerated jug, controlling and lowering the temperature of the product thanks to precise controls down to -24 °. With the appropriate pre-refrigeration of the jug, for example, all the organoleptic characteristics of the food will be preserved, especially avoiding the overheating of the product caused by the friction of the blades, with the consequent and inevitable oxidation of the product (when using a traditional cutter). The final result will be to have products such as sauces, creams, fillings, perfectly homogenized thanks to the speed that can reach up to 8000 rpm (almost three times that of a normal cutter), thus enhancing the colors and flavors of your preparations. Moreover, thanks to the combination of high speeds and cold, products such as meat or fish fillings can be better processed, with results impossible to obtain with other equipment. Reducing the temperature of a product in the bowl of the HOTMIXPRO MASTER BREEZE guarantees an extraordinary result not only to acquire a hygienic and sanitary safety as happens through the use of a normal blast chiller, but above all to, thanks to the constant mixing that cools the product being processed, avoid dehydration and stratification of the fat parts, normally exposed in a blast chiller to forced ventilation. Emulsifying products inside the refrigerated jug of the HOTMIXPRO MASTER BREEZE guarantees a result unparalleled with any other technique, thanks to the stabilization of the proteins.
